Il Taurasi è un importante vino rosso campano, a base di uva Aglianico. È considerato “il Barolo del sud” perché come è il Barolo è un vino strutturato, complesso e longevo. L’aglianico è una grande uva nera autoctona che matura tardi, infatti si vendemmia sempre ad ottobre inoltrato, a volte anche a inizio novembre. Questo gli permette di accumulare polifenoli e profumi. Il territorio dell’Irpinia inoltre favorisce vini strutturati e longevi grazie al terreno con argilla, calcare e ceneri vulcaniche e anche grazie al clima fresco con escursione termiche importanti dovute all’altitudine dei vigneti.
Le uve vengono diraspate e pigiate e fermentano in botti di legno con macerazione sulle bucce. Il vino svolge la fermentazione malolattica e matura per almeno un anno in botti di rovere.
