È ottenuto dall’attenta vinificazione delle migliori uve raccolte esclusivamente a mano in cassette da 15 Kg. I grappoli sono trattati con cura per evitare qualsiasi danneggiamento durante il trasporto e l’arrivo in cantina. Le uve vengono pressate sofficemente e solo il mosto fiore viene fatto fermentare in tini d’acciaio a temperatura controllata. Nella primavera successiva avviene la spumantizzazione secondo il tradizionale metodo classico della rifermentazione in bottiglia. Dopo
un’attesa di almeno sei mesi, viene addizionato di lieviti accuratamente selezionati e imbottigliato. Terminata la rifermentazione, le bottiglie rimangono coricate per più di 24 mesi. Il lungo affinamento sui lieviti esalta le caratteristiche del vino e gli conferisce maggiore complessità.
