La Kawashima Brewery è situata nella Prefettura di Shiga, vicino al bellissimo fiume Ado Gawa e al lago Biwa, una fonte d’acqua centenaria che arriva dai monti Hira e viene utilizzata per la produzione del Sake. L’Area è conosciuta per la qualità del suo riso e delle sue fonti d’acqua. Kawashima è stata fondata nel 1865. Si narra che Mr. Kawashima abbia tagliato un pino antico per costruire la Brewery e che abbia chiamato il suo Sake Matsu No Hana, il fiore di Pino.
